Here are some delicious pancake recipes for everyone, courtesy of our partners at Smeg;

Gluten Free Pancake Mix

125g gluten free flour

1 egg

250ml milk

Precise measuring of ingredients is absolutely crucial when making the perfect gluten free pancakes. Once you have mixed all the ingredients together, we’d recommend you leave the mixture for at least 10 minutes before you begin frying and flipping.

Toppings: try chia seeds and blueberries as a healthy option. 

Dairy-Free Pancake Mix

125g plain flour

1 egg

300ml coconut or hemp milk

Going dairy-free has never been easier with all of the dairy alternatives popping up in shops now. Try coconut or hemp milk for a slightly different taste or perhaps you’d prefer to opt for a nut milk. These pancakes can be paired perfectly with a dusting of coconut flakes and fresh berries.

Pumped Post Work-out Pancake Mix

2 bananas, roughly chopped

2 scoop vanilla protein powder

2 eggs

50g rolled oats

2 tbsp coconut oil

Pancake day is for everyone – even if you are on a strict work-out diet! Adding protein and oats to you mixture will help you to build and repair your muscles after those tiresome work-out sessions. 

Inspired Italian Ricotta Pancakes

2 oranges, zest of

200g plain flour

1 tsp baking powder

1 egg, beaten

200ml semi-skimmed milk

220g tub ricotta

Does the idea of ricotta added to your pancake batter inspire you? It adds a beautifully rich, creamy and almost soufflé like texture to your pancakes. Ricotta pancakes go perfectly with a scoop of ice cream and some fresh fruit topped off with a drizzle of honey. 

Banana Pancakes

2 bananas

4 eggs

Halved blueberries and/or chocolate chips

Flour doesn’t always have to me a must-have ingredient in your pancake mixture. A banana and eggs can be added together to form a smooth batter as an alternative to flour. For extra texture, add halved blueberries or chocolate chips while cooking.

Savoury Potato Pancakes

1 medium potato

140g plain flour

2 eggs

1 tbsp baking powder

1tbsp chopped dill

200ml milk

Potato pancakes are a fabulous alternative to sweet pancakes. You can use cooked or left over boiled or steamed potatoes to make these pancakes. Top them with flaked salmon, dill and a healthy sized dollop of crème fraiche.
